Vegan Lefse Recipe

Now I am going to warn you. The first time that you try to make this recipe it may not turn out. Lefse is a tricky food to make and will take some time and practice. Equipment:

Lefse Griddle

Lefse Stick

Cloth Covered Pastry Board

Rolling Pin

Rolling Pin Sock

Potato Ricer

Flour Sack Towels

Metal Bowl


Ingredients:

5 lbs. Potatoes

1/2 Cup Oat milk

3 Tbs. Vegan Butter

1 tsp. Salt

1 Tb. Sugar

3 Cups Flour


First peel and boil the potatoes until soft. Then rice the hot potatoes into a bowl and mix with oat milk, vegan butter, salt, and sugar. Cover the potato mixture with a flour sack towel and let cool, leave overnight if possible. Next mix the flour into the potato mixture. Measure the dough into patties, measuring about 1/3 of a cup each. Preheat the griddle to 400 degrees. Then heavily flour the pastry board and rolling pin. Roll out the dough patty until you have a thin circle measuring about 14" in diameter. Then carefully slide the lefse stick underneath the round of lefse dough and lift from the center. Transfer the dough onto the hot griddle and cook until there are a few brown spots on both sides. Then transfer to wax paper until cooled.
